Too much cream cheese in their makis, which makes them overshadow all the flavors. I would also suggest more care when making them since it was unpleasant to have a hair in my food.

The food was very good, I would say one of the best makis in lime, without a doubt with the best quality product. I recommend their makis are very large so be careful with the open bar haha.

I had heard numerous recommendations about this place. Enthusiastic comments about a creative offering and surprising flavors. So, I decided to let my expectations run wild. But as is often the case in gastronomy—and in life—popularity doesn't always equate to quality.nnThe evening began with a decent appetizer. Well presented, with balanced flavors, unpretentious. The highlight, without a doubt, was the sake: a true gem. Smooth, aromatic, with a profile that reminded me of the artisanal Pisco Italia Reserva produced by a family in Ica: the kind of drinks that tell a story. It was the most pleasurable part of the evening.nnThen came the star of the show: the makis. And here the disappointment began.nnFirst, the size. They are excessively large. So much so that they not only hinder the experience of eating them in one bite, but also completely disrupt the proportions of ingredients. But size would be a minor detail if the flavor matched it. Unfortunately, it didn't.nnThe makis lacked harmony. There was no construction of flavors or coherence between ingredients. The combination of ingredients felt arbitrary, forced. The salmon—one of the most noble and recognizable ingredients—was practically devoid of flavor. The sauces, more decorative than functional, neither added nor enhanced. In one of the makis, excessive umami overrode any other nuances. And the ending was even more confusing: a maki with plantain and passion fruit. The plantain, overripe, imposed an almost cloying sweetness that failed to integrate with the rest. The ending left a flavor as powerful as it was disconcerting.nnThe service, while friendly, could have been more attentive. In an experience that aims to be gourmet, it is appreciated that the servers guide, explain, and provide guidance. That accompaniment was lacking, and that, for many diners, makes the difference.nnThe maki menu feels limited, especially if you're looking for variety or unusual offerings. There's fertile ground for innovation, exploring fusions, or returning to the elegance of simplicity done well.nnFinally, the atmosphere didn't help the experience either. Too dark, no background music, no atmosphere. And we all know: eating is also a complete sensory experience.nnIn short: a night with very specific highs and all-too-obvious lows. The sake and the appetizer salvaged the evening, but the makis—the heart of the meal—need a serious overhaul. It's not enough for them to be great; they have to be memorable.
